Sri Lankan cuisine in New Jersey

EDISON, N.J. (WABC) -- In this week's Neighborhood Eats we visit Sigiri, a Sri Lankan restaurant located in Edison, New Jersey. Sigiri happens to be the only Sri Lankan restaurant in New Jersey, and one of only a dozen in the whole country.

Owner Sumith Desilva first opened with the hopes of exposing people to the island and the nation's exotic cuisine, with dishes like hoppers, and kotthu roti.

Kotthu roti is incredible, the main ingredient roti is shredded. Chef Suranga Padeep Kmara sautés garlic, ginger, and cabbage, adds eggs, chops everything up and lastly adds roti, tomatoes, soy sauce, leeks, carrots, and tops the dish with coconut milk.

It's filling enough for a meal, and a good entree into Sri Lankan cuisine, no matter where you're from.

Vegetable Kotthu Roti Recipe

Homemade Roti Ingredients:

2 Cups of wheat flour
½ Cop of water
1 Tablespoon vegetable oil
Pinch Salt

Preparation:

In a medium bowl, mix the wheat flour, water, oil and salt.

Work together until the mixture pulls together into dough.

Turn out onto a floured surface and knead well.

Set aside for 30 minutes. Roll out dough on counter until paper-thin.

Cook the sheet of dough on an oiled griddle pan for a few minutes, until just lightly brown.

Make sure not to overcook to retain the elasticity of the roti, if it becomes brittle and

crispy it is overdone.

Let the roti cool to room temperature.

Slice it into to ½-1 inch strips or chop in food processor.

Kotthu Roti Ingredients:

2 Tablespoons vegetable oil
1Tablespoon onion, diced
1 Tablespoon garlic, diced
1 Tablespoon ginger, diced
2 eggs
2 Tablespoons Cabbage, chopped
2 Cups of homemade Roti. shredded
2 Tablespoons carrots, chopped
2 Tablespoons of leeks, chopped
2 Tablespoons soy sauce
1/2 Teaspoon red chili flakes
½ Teaspoon ground black pepper
1/8 cup coconut milk
Salt to taste

Method

Heat oil in large skillet.

Add onion, garlic, ginger and eggs (optional).

Cook stirring well, until they are almost tender.

Add cabbage and stir until cooked. Add roti pieces, carrots, and leeks.

Stir well, adding soy sauce, pepper chili flakes and salt, and coconut milk.

Cook for two more minutes.

Serve as a meal or a side dish.
