Maple syrup gets used in new ways
Janaury 23, 2011 (CHICAGO) -- Maple syrup can make waffles and pancakes taste better, but you don't have to stop there!
Chef Ina Pinkney, owner of Ina's at 1235 W. Randolph St. in Chicago, visited the ABC7 Chicago studio to show how to use maple syrup in different ways. How about Maple Syrup Wings for the Bears/ Packers game?
Maple Marinated Chicken Wings
3 lbs. chicken wings and drumettes
1 1/2 tablespoons pure maple syrup
3/4 cup soy sauce, low sodium
1 1/2 teaspoons ginger, ground
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1 teaspoon chives, dried
1. Preheat oven to 375 degrees.
2. Put all the marinade ingredients in a bowl and blend well.
3. Set aside about 1/4 of the marinade for basting the wings before they bake.
4. In a bowl or baking pan, place a layer of the wings, and pour some marinade over them to coat.
5. Continue to add layers of wings and marinade, one layer at a time until all the marinade is used.
6. Cover and refrigerate for at least 4 hours. (Leaving them overnight will result in wings that are too dark.)
7. Onto a foil lined baking pan, arrange the wings in a single layer. With a pastry brush, and using the reserved marinade, lightly coat the wings.
8. Bake for 45-50 minutes.
2, 6 oz. salmon filets
2 teaspoons pure maple syrup
2 teaspoons olive oil
1 clove garlic, minced
Fresh cracked Black Pepper
1. Preheat the oven to 450 degrees.
2. Wash the salmon and place the filets, skin side down, in a shallow roasting pan.
3. Drizzle the olive oil on the pieces of salmon and rub into the flesh.
4. Do the same with the minced garlic and black pepper.
5. Finally, drizzle the salmon with the maple syrup and rub it into the flesh.
6. Bake in the center of the oven for 14 minutes.
Roasted Brussels sprouts with maple syrup and bacon
1 lb. brussels sprouts, stems cut off and cut in half
extra virgin olive oil
2 strips bacon, cooked and crumbled
1 Tbsp. 100% Pure Maple Syrup
Preheat oven to 375.
Coat the cut sprouts with olive oil and put in shallow roasting pan.
Roast for 20-30 minutes until they get golden and even a little dark around the edges.
Remove from the oven and set aside.
In a large saute pan over medium heat, pour in the Maple Syrup and then add the bacon.
Stir until the bacon is coated and then add the sprouts.
Stir until the bacon is scattered throughout and let heat a little more.
