PHILADELPHIA - April 2, 2009 (WPVI) -- In a tight economy, a lot of restaurants struggle to keep the doors open. But some chefs find a way to do fine.

One of Philly's best-known just opened a new place you might call recession-proof.

For years, Derek Davis has been bringing top-quality meals to Main Street in Manayunk. More recently he brought exclusive Kobe beef to the suburbs at his Ardmore butcher shop, Main Line Prime.

But in a tight economy, his latest venture is more budget-friendly. Pizza Rosso is on Temple University's medical campus.

It features the sort of pizza Davis discovered in Rome. The dough is made fresh daily from premium Italian flour. You can choose from about two dozen varieties of pizza, some traditional, some aren't! But don't call it fast food. Service takes about four minutes.

Prices are higher than your neighborhood pizzeria, but portions are generous, and you get chef-quality food. If you'd prefer something other than pizza, salads are made to the same standards. Iceberg lettuce need not apply.

Pizza Rossi is at 3240 North Broad Street, just above Allegheny Avenue in North Philadelphia. It's opposite Temple's Dental School. The shop opens daily for lunch at 11am and is open into early evening. For information or to place an order, call (215) 226-2700.
